LI~LY by Aiden Byrne opened its doors in Knutsford late last year and has quickly become a celebrated success. This fine-dining restaurant is the brainchild of husband-and-wife team Aiden and Sarah Byrne, who bring decades of experience and passion to the table.

Early Lives and Inspirations
Aiden grew up in a challenging environment on a Kirkby council estate in the 1970s and 80s. His strict upbringing instilled a discipline that proved crucial for his career in the highly regimented culinary industry. He was inspired by his cousin, Alan Feeney, who introduced him to catering and music, setting him on a path to greatness.
Sarah, from the Wirral, entered hospitality at age 14, working with major hotel groups before venturing into pub management. Her journey eventually led her to partner with Aiden in opening the Church Green in Lymm 17 years ago.
A Whirlwind Romance and Partnership
They met on Facebook 19 years ago, and despite previous near-misses, their connection was instant. After a telephone courtship, they met in person on Aiden's birthday in 2006, and their lives changed forever. By November of that year, they were living and working together, embarking on a new chapter at the Church Green.
Building Success Together
Their first venture faced initial struggles, with customers hesitant to try the new menu. A turning point came when Aiden appeared on Saturday Kitchen, leading to a surge in bookings. They adapted by shifting to a grill-style menu to sustain weekday business, demonstrating their resilience and adaptability.
Aiden's career highlights include becoming the youngest-ever recipient of a Michelin star in 1993 at Adlards in Norwich. Despite initial impostor syndrome, this accolade opened doors to work with culinary legends and gain extensive experience in London and Ireland.
Overcoming Challenges
The hospitality industry has seen its share of hardships, including the COVID-19 pandemic. At the Church Green, they faced significant losses but pivoted successfully by investing in outdoor dining and a deli, quadrupling turnover. However, post-pandemic challenges led them to move on from the pub, a place filled with memories, including the birth of their daughter Bella.
The Birth of LI~LY
Choosing Knutsford for its charm and supportive community, they aimed to create a relaxed yet sophisticated dining experience. Funding was a hurdle, but after a chance meeting with investor Ged Mason, who admired Aiden's charity work, they secured the necessary support. LI~LY now offers six- or nine-course menus, with monthly changes and special chef nights featuring Michelin-starred guests.
The Meaning Behind the Name
The name LI~LY derives from the historical river Lily in Knutsford, linked to King Cnut, reflecting their deep connection to the local area.
Sourcing and Philosophy
They prioritize local suppliers for ingredients like beer from Mobberley and beef from Marston, emphasizing quality and community support.
